Bacon and Cabbage
 

A wonderful main course for St. Patrick's Day!

1-2 lbs. of Sliced Bacon
1 cabbage
Salt and pepper
Bacon or chicken stock

Place cabbage in a pot and cover with cold water. Boil for 15 minutes and drain. Cover with fresh cold water for 1 minute. Drain and slice the cabbage. Place half of the bacon strips on the bottom of a casserole dish. Add sliced cabbage. Sprinkle with salt and pepper to taste. Pour bacon or chicken stock over ingredients until barely covered. Top with remaining bacon slices. Cover and simmer for one hour or until most of the liquid is absorbed.
