Flounder with Mint Lime Rhode Island
 

What a delicious main course just for Valentine's Day.

2 flounder fillets (1/4 pound each)
1/4 pound lump crabmeat
4 tablespoons butter
2 tablespoons fresh mint leaves, chopped
juice of 1 lime (2 tablespoons)
1/2 cup heavy cream -
2 lime slices and 2 mint leaves (garnish)

Melt 2 tablespoons butter and add lime juice. Turn off heat. Add mint and cream. Set aside. Spoon 3 tablespoons of crabmeat and 2 tablespoons lime cream sauce in each fillet. Roll and secure with a toothpick. Place fillets on lightly greased broiler pan. Dot remaining butter on fish and broil
approximately 2 minutes on each side. Pour remainder of sauce over fish and garnish with lime slice and mint leaf. Makes 2 servings.
